Shiitake ( Lentinula edodes ) or fragrant mushroom in Chinese, but also oak lentin (common name in French), is an edible mushroom growing in the Far East on the wood of various hardwoods, and which takes its Japanese name from the Shii tree ( Castanopsis cuspidata ) which is its historical host. The latter is a tree with very small leaves, from the Fagaceae family, related to the oak and the chestnut (Castanopsis meaning "false chestnut").

Shiitake is the second most cultivated mushroom in the world, China being the largest producer. It has been cultivated there for at least 1000 years. It is also widely cultivated in Japan. The Japanese nicknamed it "the samurai mushroom" because it was reserved for the Emperor and his faithful.

It was traditionally grown on dead deciduous branches pierced with holes into which mycelium (mushroom spawn) was introduced, or on wooden logs. Today, it is most often grown in mushroom farms on pre-seeded cork-like compost pads. It is immersed in cold water to accelerate fruiting.

Shiitake is primarily a highly valued ingredient in the cuisine of these two countries, but it is also part of their traditional medicines.
