Matcha is made exclusively from the young leaves of the tea plant, traditionally handpicked in early May.
Three to four weeks before this first harvest, the tea bushes are covered with a tarpaulin to shade them and thus intensify their rich composition. Like all shade-grown teas, it is richer in caffeine, amino acids, and certain bitter chemical compounds.
The harvested leaves are then ground between two granite stones to obtain an ultrafine emerald green powder.
This traditional, long and meticulous process produces only 30g of precious powder per hour, which partly explains the high price of this commodity of kings.
